muffin surprise

It has become somewhat of a tradition for Bao and me to bake together on the last day of break, before school starts up again. Today, while the two Littles napped, he requested that we bake chocolate chip muffins. I was hoping to do something a little healthier so we compromised and made zucchini chocolate chip muffins.

Yesterday I bought a new cookbook, America's Test Kitchen Family Cookbook, so we used the recipe for zucchini bread and made some minor adjustments and additions. I like this cookbook – from the authors' of Cook's Illustrated – for their in-depth explanations, their (unendorsed) product and ingredient suggestions, and their useful tips and practical advice. 

In this recipe, they suggest grating the zucchini and squeezing out all the liquid before adding it to the batter. I researched several online recipes for zucchini bread/muffins before choosing this one and none of them made this suggestion. Maybe I'm clueless, but I wouldn't have done this step to the degree that they suggested and I shudder to think how our muffins would've ended up if I didn't. There was a lot of liquid.

(Since I don't like to be wasteful, I even saved some of the squeezed zucchini juice and added it to the baby's food. Yum!)

The dry and wet ingredients were whisked. Separately, of course.

Then combined along with the grated, liquid-free zucchini. I taught Bao how to "fold" them together without overworking the flour.

Whoa. I almost forgot to add the chocolate chips!

Around the time the muffins were done baking, both Littles woke up from their naps and it was so hectic that I forgot to take a picture of the finished product. However, I did think fast enough to grab my camera when – SURPRISE! – Bao lost his front tooth taking a bite of the muffin! 

Not pretty!

I assure you the muffin was quite good and tender, not hard as a rock as you might think. His tooth was hanging by a thread so the muffin bite was just enough to finish it off, I guess.

We're looking forward to a visit from the Tooth Fairy tonight. Maybe we'll even leave her a muffin.
