seed mix

Last month, I bought GP's cookbook, My Father's Daughter, and despite all the mixed buzz surrounding it, I love it.

It has quickly become one of my favorite cookbooks and one that I reference most often for everyday cooking. Within the first two weeks of purchasing it I eagerly tested five recipes, which is a record for me in such a short timespan with any cookbook. Some of her anecdotes offer unrealistic expectations for a "normal" home cook like me - cooking exclusively organic, substituting vegenaise for mayonnaise, flying to Umbria for inspiration - but for the most part, her recipes are easy to follow and emphasize the importance of using fresh ingredients to produce flavorful, healthful and kid-friendly meals.

One of my favorites is her Seed Mix recipe. I'd never really come across anything like it and though it's not a "meal" in the traditional sense, it's a great way to incorporate super nutritious ingredients in disguise - a necessary feat for my picky eaters.

A mixture of pumpkin seeds, sunflower seeds, flax seeds, goji berries and almonds is first measured, mixed then ground up into a meal or powder.

I use my trusty and powerful Vita-Mix (an essential tool in any home cook's kitchen) to blend the seeds into a coarse mixture that not only looks colorful, it smells fragrant and tastes pretty darn good.

You can add the mix to cereal, homemade granola, pancake and muffin batters, rice porridge or bread mixes. The best part is that it stores it in the fridge for several weeks so make a big batch and it'll last a long time.

I add a tablespoon or two into their oatmeal every morning. It's a super quick and easy way to add a whole lotta goodness into their unsuspecting and growing bodies.
